Ingredients
2 refrigerated pie crusts
8 Honeycrisp apples, peeled, cored, slice very thin
1 cup apple cider
1/2 cup white sugar
1/2 cup brown sugar
3/4 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp all spice
1/4 cup flour
1/4 tsp salt
1 large egg
1 tsp milk
Method
Preheat oven to 425 degrees.
Lightly spray a 9 inch pie pan with cooking spray and lay one of the pie crusts in it, trimming excess from the rim.
Pour apple cider into a small saucepan and cook over medium high heat until reduced to 1/4 cup.
In a large bowl combine the apple slices and apple cider reduction, mix well.
In another bowl combine the white sugar, brown sugar, nutmeg, cinnamon, all spice, salt, and flour. Mix well.
Add flour mixture to the apples and toss to coat evenly.
Using a slotted spoon, transfer apples to the pie crust, leaving remaining juices in the bowl.
Roll out second pie crust and cut into 1 inch strips.
Make a lattice pattern on top of your pie. Weaving over and under, alternating.
Combine egg and milk in small bowl and brush top of pie crust.
Place pie on a parchment paper lined baking sheet to catch drips and bake for 20 minutes.
Reduce oven to 375 degrees and continue baking for an additional 45 minutes until crust is golden brown and pie is bubbling. If browning too quickly, simply cover loosely with aluminum foil.
Remove from oven and cool completely on a wire rack.
