Ingredients
1 pie crust
4 eggs
2 cups heavy cream
12 slices thick cut bacon
3/4 tsp salt
1/4 tsp black pepper
1/8 tsp nutmeg
1/4 lb shredded cheese of choice
Method
Preheat oven to 425 degrees.
Roll pie crust out into a 9 inch pie pan.
Cook bacon over medium high heat in a large skillet, in batches if needed, until crisp. Drain and crumble.
In a large bowl, beat eggs with a whisk.
Add the heavy cream, salt, pepper, and nutmeg and whisk until combined.
Stir in the cheese and mix well with a wooden spoon.
Spread bacon onto pie crust and then pour egg mixture over top.
Bake for 15 minutes.
Decrease oven temperature to 325 degrees and bake an additional 35-40 minutes, until knife inserted in middle of quiche comes out clean.
Allow to cool for 10 minutes before slicing and serving.
