Note: you want to get center-cut bacon as it will have less fat and it will wrap easier around the water chestnuts.

Ingredients

1 lb center-cut bacon

2 cans whole water chestnuts

toothpicks

1/2 cup ketchup

1/4 cup white sugar

1/4 cup Brown sugar

Method

Heat oven to 425 degrees.

Cut the bacon in half on a cutting board, open the water chestnuts and drain the liquid, then add to board with a pile of toothpicks.

Wrap each water chestnut with a piece of bacon, pierce through with a toothpick and set into the grate of a broiler pan.

Repeat until all of the bacon and chestnuts are used. If making a lot of these, you can still wrap while the 1st batch cooks.

Put in the oven on center rack and cook for 10-12 minutes.

Remove from oven and let cool for a minute so you can flip them easier. When you can handle the toothpicks, flip each wrapping and put back into grate of broiler pan. Put back in the oven for another 10-12 minutes.

Remove from oven and transfer to a plate with dipping sauce below.

You can make these a day ahead of time if you’re planning a big party and have other items to make. Just reheat at 350 for 10-15 minutes.

Dipping sauce

Mix ketchup and sugars together in a microwave safe bowl. Microwave for 30-60 seconds, until bubbly. Remove, stir, and serve.
