Ingredients
1 1/2 lbs baking potatoes
1/4 lb butter
2 cups diced onion
1/3 cup flour
5 cups of water
1/4 cup Chicken broth
1 cup instant potato flakes
3/4 tsp basil
1 cup heavy cream
1 cup milk
Optional: For the topping, you’ll need shredded cheddar cheese, diced green onion, and crumbled bacon.
Method
Preheat oven to 400 degrees, wash and wrap potatoes in foil, and bake for an hour or until easily pierced with a fork.
Remove potatoes, let cool completely, then skin and cut into 1/2 inch cubes.
Melt butter in a large stockpot and saute onions over low heat for 10 minutes, until translucent, don’t let them brown.
Add flour and cook an additional 5 minutes. Stirring often.
In a separate container combine water, chicken broth, potato flakes, and basil and whisk until smooth. You don’t want any lumps.
Slowly pour into the pot with onion, whisking so no lumps form.
Increase to medium heat and bring to a simmer.
Add milk and cream, stirring until smooth, salt and pepper to taste, and simmer an additional 15 minutes.
Add cubed baked potatoes, simmer another minute, and serve with toppings if desired.
