Ingredients

2 cups flour

2 cups fresh blueberries

1/2 cup buttermilk

1/2 cup butter

1 cup sugar

1 large egg

2 tsp lemon zest

1 tsp vanilla

2 tsp baking powder

1 tsp salt

Method

Preheat oven to 350 degrees.

With a hand mixer or in a stand mixer with whisk attachment cream the butter with the sugar until fluffy.

Add the egg and vanilla and beat until combined.

In a bowl, combine the blueberries with a 1/4 cup of the flour.

In another bowl combine the rest of the flour, baking powder, and salt.

Add the flour mixture and the buttermilk to the batter and mix well.

Gently fold the blueberries into the batter.

Spread batter into a greased square 9 inch pan.
