Ingredients

1 pint fresh blueberries

2 tbsp sugar

1 tbsp balsamic vinegar

1/4 cup heavy cream

zest of 1 lemon

1 1/2 tbsp lemon juice

1 1/2 cups ricotta

12 1/2 thick pieces of baguette or french bread

1 stick butter, softened

12 basil leaves

balsamic glaze

salt and pepper

Method

Combine the blueberries, sugar, and balsamic vinegar in a bowl.

In another bowl combine the ricotta, heavy cream, lemon zest and juice, 1 tsp salt, 1/2 tsp black pepper and mix with a hand mixer until smooth and fluffy.

Turn on your ovens broiler.

Butter one side of each piece of bread and place butter side up on a baking sheet.

Broil on middle rack for 1-2 minutes or until just light golden brown, don’t burn the bread, this can happen quickly. Remove from oven and let cool.

Spread a thick layer of ricotta mixture on each slice of bread.

Top with a tablespoon of the blueberry mixture and top with a basil leaf.

Place bread on a serving platter and drizzle with the balsamic glaze.

You can sprinkle additional lemon zest on top before serving if desired.
