Ingredients
1 package of 2 refrigerated rolled-out pie crusts
2 pints of blueberries
2/3 cup Sugar, plus 1ts
1/4 cup cornstarch
2 tbsp lemon juice
1 egg white, beaten
Method
Heat oven to 400 degrees.
Roll one crust into a glass pie dish.
In a large bowl. Combine the blueberries, 2/3 cup sugar, cornstarch, and lemon juice. Mix well and let sit for 5 minutes.
Cut other pie crust into 1/2 inch wide strips.
Pour blueberry mixture into pie dish and spread evenly.
Make your lattice top and brush with egg white.
Bake for 15 minutes at 400. Reduce heat to 350 and bake an additional 40-50 minutes, until center is bubbling and crust is golden. Tent with foil if crust is getting too dark.
Let cool and serve with vanilla ice cream.
Lattice Top: I’ll provide step by step pictures when I make my next pie. You lay 2 stripes of sliced crust at a 90 degree angle and edge of pie. Then add additional slices horizontally, putting every other one underneath the single vertical slice. To add the vertical slices, fold back every other horizontal slice, add vertical slice, fold slice over, then fold back every other slice, and repeat until done. Once you get the hang of it, you’ll be able to do this without much thought.
