Ingredients
1/2 cup onion, chopped
1/2 cup carrots, chopped
1/2 cup celery, chopped
1 lb ground beef
3 oz pancetta, chopped
3 tbsp olive oil
1 cup dry white wine
1/3 cup tomato paste
2 cups chicken broth / stock
1 cup milk
Method
Heat oil in a large pot over medium heat.
Add beef and cook until no longer pink. Transfer to a bowl.
Add pancetta and cook until crisp, about 6-8 minutes.
Add the onion, carrots, and celery and cook until soft, about 6-8 minutes.
Return beef to pot, add the wine, season to taste, and cook on medium low for 15 minutes or until wine has evaporated.
Add the tomato paste and cook for 5 minutes.
Add the chicken broth / stock and milk, reduce heat to low, and lightly simmer for 2 hours.
If sauce looks to be drying out, add 1/2 cup of additional chicken broth.
