Ingredients

1/4 lb ground pork

1/2 lb ground chuck

1/2 cup onion, chopped

1/2 cup carrots, chopped

1/2 cup celery, chopped

1 cup dry white wine

12 oz Italian plum tomatoes, crushed or pureed

1 cup milk

1 tbsp olive oil

3 tbsp butter

salt and black pepper

Method

Add the olive oil, butter, and onion to a large pot and cook over medium heat until onion turns translucent.

Add the carrots and celery and cook for 2 minutes.

Add the ground pork, ground chuck, salt and pepper to taste, and cook until no longer pink.

Add the milk and simmer until it bubbles away entirely.

Add the wine and let simmer until evaporated.

Add the tomatoes and lightly simmer for up to 3 hours, adding 1/2 cup water if sauce looks to be drying out. Water should be evaporated before serving sauce.
