Note: this makes a large batch of soup. Cut the recipe in half for a smaller portion.
Ingredients
3 28oz cans of San Marzano tomatoes pureed with juices.
9 slices of thick stale Italian bread, about 1lb
1/3 cup olive oil
2 cloves of chopped garlic
1 small onion, diced
3 cups chicken broth
2 tbsp chopped basil
1 tsp oregano
salt and pepper
Method
In a large pot, heat the olive oil over medium-high heat and add the garlic. Cook until golden, about 1-2 minutes.
Add the onion and cook until softened, about 5-6 minutes.
Add the tomatoes and chicken broth, bring to a boil, reduce heat and simmer for 30 minutes.
Remove from heat and add the bread and basil. Make sure bread is completely submerged, cover, and let sit for 30 minutes.
Uncover the pot and whisk the soup until the bread breaks completely down and soup now looks thick like porridge.
Reheat soup, salt and pepper to taste, and serve.
