Ingredients
2 cups broccoli florets
1 onion, sliced into 1/8s
2 tbsp Butter
2 tbsp all-purpose flour
1 tsp thyme
salt and pepper
1 1/2 cups milk
1 cup shredded cheddar cheese
2 cups fresh bread crumbs
1/3 cup butter, melted
1/2 cup chopped parsley
Method
Heat oven to 350 degrees.
In a saucepan, melt the 2tbsp of butter. Add the flour and thyme, and salt and pepper to taste and whisk constantly until smooth.
Add the milk and bring to a soft boil, whisking often so the mixture doesn’t burn or boil over.
Once thickened, remove from heat and stir in the cheese until smooth.
In a greased 9 x 9 casserole dish add the broccoli and onion and stir in the cheese sauce.
In a bowl, mix the fresh bread crumbs with the 1/3 cup of melted butter and parsley. Sprinkle over top of the broccoli.
Bake for 25-35 minutes until the top is golden brown and bubbly.
Serve while hot.
