Ingredients

6 medium zucchini, halved lengthwise

7 tbsp olive oil

3 cloves minced garlic

1 onion, diced

14oz can of San Marzano whole peeled tomatoes, drained and chopped

2 cups whole milk ricotta cheese

3/4 cup grated pecorino or parmesan

3/4 cup fresh bread crumbs

3 tbsp parsley

2 tsp oregano

2 eggs, beaten

Salt and pepper

Method

Scoop the seed and pulp from zucchini halves, leaving 1/4 inch thickness around edges.

Heat 3 tbsp of the olive oil in a skillet over medium heat.

Add the onions and cook until soft and golden, about 8 minutes.

Add the garlic and cook for 1 minute.

Add the tomatoes and cook an additional 4 minutes then set mixture aside to cool.

In a large bowl, combine the ricotta, 1/4 cup of the pecorino or parmesan, 1/4 cup of the bread crumbs, parsley, eggs, and oregano.

Add the onion mixture to the bowl, salt and pepper to taste, and combine.

Turn on the broiler in your oven with the oven rack about 8 inches from the top.

Using 2 tbsp of olive oil, rub inside of each zucchini half and season with salt.

Place zucchini open side up on baking sheet and broil for 5 minutes.

Remove from oven and top each zucchini half with stuffing mixture.

Sprinkle zucchini with remaining bread crumbs and cheese, and drizzle with 2 tbsp of olive oil.

Broil until soft and tops are lightly browned, about 10-12 minutes.

Remove and serve.
