Ingredients
1 3lb 5 bone in center cut rib loin roast
1 tbsp kosher salt
1/2 cup butter
3 cloves garlic, smashed
1 sprig rosemary
1/3 cup water
1/4 cup lemon juice
Method
Preheat oven to 375 degrees.
Score roast in a crosshatch (x) pattern and rub roast evenly with salt.
Place pork fat side down in an oven safe skillet and sear for 10-15 minutes over medium-low heat.
Flip pork so it is bone side down, add butter, garlic, and rosemary.
Baste roast with melted butter and transfer to oven.
Bake for 45-50 minutes or until thermometer reads 130 degrees in thickest portion, basting roast every 10 minutes.
When done, transfer roast to a wire rack set in a baking sheet.
