Ingredients
6 1/2 inch thick pieces of crusty bread
4 ripe tomatoes
fresh basil leaves
4 garlic cloves, peeled and smashed
salt
fresh pepper
olive oil
Method
Cut the tomatoes in half, remove the seeds, and chop them into 1/2 inch – 3/4 inch cubes.
Grill or toast the bread on both sides until golden.
Rub garlic all over the hot side of the bread.
Top each slice with tomatoes and a leaf of basil.
Sprinkle with salt, a grinding of pepper, and drizzle with olive oil and serve.
