Ingredients
3 firm Italian plum tomatoes
1/4 tsp salt
1 tbsp chopped basil
1 tbsp grated parmesan
2 tbsp chopped red onion
1 tsp dried parsley
2 tbsp olive oil
1 tsp balsamic vinegar
Method
Dice the tomatoes and toss with the rest of the ingredients and refrigerate for at least an hour.
Serve with a small spoon to place dip onto bread.
Toasted Bruschetta Bread
You’ll want a french baguette, small ciabatta, or some other long, small round loaf of bread, about 2 – 3 inches in diameter. You’re using the bread as a cracker for the dip.
Ingredients
a loaf of bread as stated above
olive oil
kosher salt
Method
Preheat your oven to 350 degrees.
Slice the bread into 1/2 inch slices and place on a cookie sheet.
Brush olive oil on top of all the slices and then sprinkle with the kosher salt.
Bake in the oven until bread starts to get crispy on top, about 5 minutes. You can also broil if you wish, but you need to watch constantly because it will burn very quickly.
Remove from oven, transfer to a paper-lined basket and serve with the dip.
