Ingredients
6 thick pieces of country bread
2 tbsp olive oil
1/2 small onion, thinly sliced
2 small red and yellow peppers cut into thin strips
2 tbsp red wine vinegar
2 serrano chilis, seeded, and cut into thin strips
1 tsp dried oregano
1 clove of garlic, peeled
salt and pepper
Method
Heat the olive oil in a large skillet.
Add onion, peppers, chili, and 1 tsp each of salt and pepper.
Turn heat to high and cook until vegetables soften and lightly brown, about 5 minutes.
Add vinegar and lower heat to medium and cook additional 6-7 minutes, stirring occasionally.
Add oregano, stir and set aside.
Toast bread on both sides, rub with the garlic, top with pepper mixture, and serve.
