Ingredients

1 1/2 cups shredded chicken

4 scallions, thinly sliced

1 small yellow onion, diced

1/2 cup buffalo sauce

12 egg roll wrappers

1 tbsp cornstarch

2 tbsp butter

2 tsp minced garlic

1 carrot, peeled and diced

2 celery stalks, diced

1/2 tsp of salt and pepper

Method

In a large pan, melt the butter and add the onion, garlic, carrot, and celery. Cook until softened, 8-10 minutes.

Transfer to a large bowl and add the chicken, scallions, buffalo sauce, salt and pepper, and mix until combined.

Preheat deep fryer with your choice of oil to 350 degrees.

Combine cornstarch with water to make a thin paste.

Place an egg roll wrapper with pointed end towards you, place 2 tbsps of mixture in the middle and close in this manner. Bring the pointed sides into the middle, and then roll away from you to form the roll, sealing the edges with the cornstarch mixture.

Repeat with remaining wrappers.

Fry egg rolls a few at a time for about 5 minutes or until golden and crispy. Drain on paper towels and serve warm with blue cheese, ranch, carrots, and celery if desired.
