Note: Mascarpone is an Italian cream cheese. You can substitute regular cream cheese if your grocer doesn’t carry it.
Ingredients
1/2 of a 12oz box of jumbo shells
10 oz whole milk ricotta cheese
8 oz mascarpone cheese
16 oz shredded mozzarella cheese
8 oz grated parmesan cheese
2 tbsp dried parsley
2 tbsp dried oregano
Method
Preheat oven to 400 degrees.
Cook shells as instructed, al dente is fine.
In a large bowl combine the ricotta, mascarpone, 4 oz parmesan, 8 oz mozzarella, parsley, and oregano.
Spray a 9 x 13 baking dish with cooking spray and add half the sauce, spreading evenly.
Stuff the shells with the cheese and arrange in the baking dish.
Cover shells with remaining sauce and then the remaining mozzarella and parmesan.
Cover tightly with foil and bake for 30-35 minutes, until cheese is melted and bubbly.
Remove from oven, let cool 5 minutes, and serve.
