Ingredients
1 1/2 lbs shredded chicken
7 oz green chilis
12 oz black beans, drained
15 oz enchilada sauce
10 tortillas
1 tsp cumin
1 tsp garlic powder
1 tsp kosher salt
1 tsp chile powder
3 cups shredded cheese
Method
Preheat oven to 350 degrees.
In a large bowl combine the chicken, salt, cumin, chile powder, garlic powder, chilis, black beans, and 1/2 cup of the enchilada sauce.
Pour 1/2 cup enchilada sauce into bottom of a baking dish.
Divide chicken mixture and half of the cheese evenly amongst tortillas, roll tightly, and set in baking dish.
Top with remaining cheese and enchilada sauce.
Bake for 15 minutes or until hot and bubbly.
Serve with desired toppings.
