Another dish that is American Italian and that you won’t find in Italy. Chicken breaded and fried, topped with mozzarella, and baked until bubbly. Top with your favorite sauce or marinara.
Ingredients
4 thin boneless, skinless, chicken breasts
2 cups flour
2 cups panko bread crumbs
4 large eggs
1 lb fresh mozzarella, sliced
1 tbsp oregano
1 tsp garlic salt
1/2 tsp pepper
red sauce of your choice
grated parmesan
4 tbsp olive oil
Method
Preheat oven to 400 degrees.
In a large flat bowl beat eggs with oregano, garlic, salt, and pepper.
Spread flour onto a large plate.
Spread bread crumbs onto a large plate.
Coat the chicken breasts with flour, then egg, then bread crumbs and set on a plate.
Heat 1/2 of the oil in a large skillet and cook the chicken 2 at a time for 2 minutes per side, transferring to a baking sheet when finished. Add more olive oil if necessary.
Top each breast with sauce, then slices of fresh mozzarella, and then some parmesan.
Bake for 6-8 minutes, until the cheese is melted and the chicken is done.
Remove from oven and serve.
