Ingredients
whole (5-7 lbs ) pork Boston butt shoulder roast
2 tbsp olive oil
1 tsp thyme
3 tsp Juniper berries
1 tsp salt
1 tsp pepper
3 bay leaves
1/2 cup water
Method
Rub roast with salt and pepper, use more if necessary.
Heat olive oil in large skillet and brown pork on all sides.
Place pork into slow cooker, Mix remaining ingredients and add to the slow cooker..
Cook on low 9-10 hours, removing some of the liquid if it gets to high in the slow cooker.
Remove pork, remove bone if it has one, and shred.
Remove the bay leaves.
Remove about 1/2 of the liquid.
Return shredded pork to slow cooker and keep warm while serving.
