Note: You can add jalapenos, tomatoes, or anything extra you wish. I also do not drain the beef, I cook the peppers and onion in the same skillet with the leftover liquid.
Ingredients
2 lbs ground beef
1 large onion, diced
2 bell peppers, cored, seeded, and chopped
53 oz can of pork and beans
40 oz can of kidney beans, drained and rinsed well
23 oz can of tomato soup
1 cup of water
1/2 cup packed brown sugar
1/3 cup chili powder
Method
In a large skillet, add the ground beef and cook until no longer pink, about 7-8 minutes.
Add beef, using a slotted spoon or spatula, to a 7 or 8 quart slow cooker.
Add the peppers to the skillet and saute until softened, about 7-8 minutes. Add to slow cooker.
Add the onions to the skillet and saute until softened, about 5-6 minutes. Add to the slow cooker.
Add the pork and beans, kidney beans, tomato soup, brown sugar, and chili powder to the slow cooker and mix well.
Cook on high for 1 hour, stirring occasionally, then turn to low and cook for an additional 3-4 hours, until hot.
Serve in bowls with shredded cheese, sour cream, or other desired toppings.
