NOTE: This recipe will make 2 omelets.
Ingredients
6 large eggs
3 tbsp butter
1 small green pepper, diced
1 small onion, diced
4 oz ham, chopped
1 1/2 oz shredded cheese of choice
Method
In a medium bowl, whisk the eggs.
In a medium skillet, heat 1 tbsp of the butter until it starts to foam.
Add the green pepper and onion and saute until browned, about 2-3 minutes.
Add the ham and cook for another 2 -3 minutes.
Transfer vegetables and ham to a bowl and mix in the cheese.
Add the other 1 tbsp of better to the pan.
Add half of the eggs to the pan and let cook until bottom is set, lifting edge of egg and tilting pan so uncooked egg will run towards the empty part of the skillet.
Add half of the vegetables and ham to one side of the eggs, cover, and cook 2-3 minutes until top of eggs are set.
Fold eggs over top of the vegetables and ham, slide onto a plate and serve.
Repeat with remaining eggs, vegetables. and ham.
