Ingredients
12 eggs
1/2 cup shredded cheese of choice
1/2 cup roasted red peppers
1 cup ham, fully cooked and diced
1 package frozen deep fried onion rings
1 tbsp butter
1 tbsp olive oil
salt and pepper
Method
Prepare onions rings according to package so they are ready when eggs are finished.
Heat a large skillet over medium heat.
Add the butter and olive oil and simmer until butter is melted, swirling the pan to coat.
Add the ham and saute until browned, about 3 minutes.
Meanwhile, in a large bowl, whisk the eggs until smooth. Salt and pepper to taste.
Add roasted peppers and eggs to the ham.
