Ingredients
2 lbs carrots, cleaned, halved lengthwise
1/4 cup unsalted, raw almonds
1/4 cup chives, sliced
1 tsp kosher salt
1 tbsp five spice powder
2 cloves garlic, minced
6 tbsp olive oil
Method
Preheat oven to 425 degrees with racks on lower and top shelves.
In a large bowl combine the garlic, five spice powder, salt, and 2 tbsp of the olive oil.
Add the carrots to the bowl and toss to coat.
Place carrots in a single layer in a baking sheet and roast on lower rack for 20-25 minutes.
While carrots are roasting, layer almond on another baking sheet and roast on top rack for 7-8 minutes, until golden brown.
Allow almonds to cool, then chop, place in a bowl, and add the remaining olive oil and the chives, salt to taste, and combine.
Remove carrots from oven, place in a serving bowl and top with the almonds and chives.
