Homemade pasta dough is an Italian classic that is easy to make and incredibly delicious. It is made with just two simple ingredients: flour and eggs. The dough can be used in a variety of recipes and can be made with either all-purpose flour, 00 flour, and/or semolina flour.
Once the dough is ready, you can roll it out and cut it into shapes for the pasta of your choice. For a more traditional approach, you can use a pasta machine to help create a thinner, more uniform pasta dough. Once you have your desired shape, you can cook the pasta in boiling salted water for approximately 3-4 minutes.

Ingredients
300g 00 flour
2 whole large eggs
4 yolks from 4 large eggs
Method
Mix the flour and then mound it in the center of a large wooden board or on your counter.
Make a well in the center of the flour and add the whole eggs and the yolks.
Using a fork, whip the eggs and add flour to them from the inside of the well.
When the dough starts to come together, about 1/2 the flour is incorporated, it is time to start kneading it. Wet your hands and start to mix the rest of the flour into the dough.
Once you have the all the flour incorporated knead the dough ball for about 10 minutes. If it is too sticky, you can dust the board/counter with some extra 00 flour. The dough should be elastic and a little sticky when you’re done kneading it.
Wrap the dough ball in plastic wrap and let set for 30-60 minutes before cutting it into your pasta.
Note: You will want the dough to be well floured when putting through pasta rollers to prevent sticking.
