Ingredients
8 large eggs beaten
1/2 cup milk
2 tsp chopped fresh chives
1/2 tsp salt
1/4 tsp black pepper
1 tbsp olive oil
1 cup sliced sweet onion
1 tsp minced garlic
1/2 cup shredded cheddar
Method
Preheat your broiler
Combine eggs, milk, chives, 1/4 tsp of the salt, and pepper in a large bowl.
Heat olive oil in a large oven proof skillet over medium high heat and add onion and 1/4 tsp of the salt and cook until soft, about 5 minutes.
Add the garlic and cook for 1 minute.
Reduce heat to medium low, add the egg mixture and top with cheese.
Cook, while stirring, for 1 minute.
Cook an additional 8-10 minutes or until mostly set.
Place skillet 6 inches under broiler and cook until browned, about 2 minutes.
Remove from oven, slice and serve.
