Ingredients

4 cups of thinly sliced onion

3 tbsp olive oil

5 large eggs

2 tbsp butter

2/3 cup Parmesan

black pepper

Method

Place onion and olive oil in a large skillet, sprinkle with salt and cook on medium-low heat until golden brown, about 15-20 minutes. drain and let cool before proceeding.

Whisk the eggs in a large bowl and add the parmesan, onions, and season with salt and pepper.

Turn on your broiler.

Melt the butter in an ovensafe skillet and add the egg mixture and cook over low heat until set and top is still runny.

Run pan under the broiler until the top of the frittata is set, being careful not to let it brown.

Slice and serve.
