Ingredients
3 cups thinly slice onion
1/4 cup olive oil
14 oz can of San Marzano tomatoes, drained and chopped
5 large eggs
2 tbsp Parmesan
salt
black Pepper
1/3 cup diced basil
2 tbsp butter
Method
Place onion and olive oil in a large skillet, sprinkle with salt and cook on medium-low heat until golden brown, about 15-20 minutes.
Add the tomatoes and simmer for 15-20 minutes.
Drain mixture and transfer to a large bowl and let cool before proceeding.
Whisk eggs in a large bowl and add the tomato mixture, parmesan, basil, and season with salt and pepper.
Turn on your broiler
Melt the butter in an oven
Run pan under the broiler until the top of the frittata is set, being careful not to let it brown.
Slice and serve.
