Garlic smashed potatoes are a delicious and easy to make side dish. Featuring boiled potatoes and garlic that are then smashed and topped with a combination of olive oil and butter The potatoes are boiled until fork golden and crispy Season with salt and pepper to taste, then scoop the potatoes onto individual plates. For a delicious twist, top with freshly chopped parsley or chives. These garlic smashed potatoes are simple to make and sure to be a hit at any gathering.
Ingredients
about 16 small Yukon gold or white potatoes, scrubbed
1/4 cup minced garlic
2tbsp kosher salt
1tbsp olive oil
4tbsp butter
Method
You want enough potatoes to fit in a 9 x 9 or 9 inch round metal pan
Boil potatoes, garlic, and salt in a large pot of water for 15-20 minutes, or until tender. Drain potatoes and save garlic.
Turn oven to broil.
Arrange potatoes, with all the garlic you can scrape out of the strainer, in the pan and smash tops with wooden spoon, masher, or fork.
Drizzle with olive oil and top with pats of butter.
Place under the broiler for about 5 minutes until crisp and golden, watch carefully so they don’t burn.
Remove from oven and serve hot.
Note: you can add sour cream, chives, bacon, and/or cheddar cheese to make them loaded potatoes.
