Ingredients

1 cup water

1/2 cup light corn syrup

1/3 cup dark corn syrup

1 1/2 cups sugar

2 1/2 cups chopped toasted hazelnuts

2 tbsp butter

1/2 tsp salt

1 tsp baking soda

Method

Line a baking sheet, with sides, with parchment paper.

In a large saucepan combine the sugar, corn syrups, and water.

Cook syrup mixture over medium heat until candy thermometer reaches 260 degrees.

Reduce heat to low and add the hazelnuts, butter, and salt.

Cook until thermometer reaches 295 degrees, stirring constantly.

Add the baking soda, stir and then immediately pour on to the parchment paper lined baking sheet, spreading it thin.

Let cool until hard.

Break into pieces and store in an airtight container.
