6 lbs bone-in skin-on chicken pieces
5 cups oil
1 /2 cups flour
kosher salt and black pepper
Method
Combine flour, salt, and black pepper in a paper bag. Feel free to add other spices if you’d like.
Coat chicken 1 piece at a time by shaking to coat while in closed bag.
Heat oil to 350 degrees.
Working in batches, fry the chicken, turning often until brown, crispy, and cooked through.
10-15 minutes for dark meat.
15-20 minutes for average sized breasts.
Transfer to a paper towel lined baking sheet to cool.
