Ingredients
1 lb gnocchi
4 oz chopped pancetta
4 oz fresh spinach
1/2 cup grated Parmesan
1 tbsp lemon juice
Method
Prepare a pot of boiling water for the gnocchi so it is ready when the spinach is.
In a large skillet over medium heat, cook the pancetta until crispy.
Transfer pancetta with a slotted spoon to a large bowl.
Add the spinach and lemon juice to the skillet with the pancetta drippings and cook until wilted, about 3 minutes.
Add the spinach to the bowl with the pancetta.
When gnocchi is ready, add to the bowl, along with the Parmesan cheese and toss.
Serve immediately.
