Ingredients

1 8oz package of cream cheese

1 cup shredded cheddar or taco mix cheese

1 bunch of green onions, chopped

Taco sauce, any heat

4 10 inch flour tortillas

2 tomatoes, seeded and chopped

Chopped peppers of your choice, jalapenos, sweet jalapenos, pepper rings, pepperoncini, etc.

Method

In a medium bowl combine the cream cheese, shredded cheese, and green onion. Mix well.

Spread mixture evenly on the tortillas.

Top each tortilla with tomatoes and the peppers of your choice. You can use different peppers to make each roll-up different.

Roll tortillas up tightly and wrap in cellophane and refrigerate for at least 2 hours.

Remove tortillas from the refrigerator, slice into 1 inch thick rounds, and serve with taco sauce for dipping.
