Ingredients
1 2/3 cups all purpose flour
3/4 cup warm milk
2 tbsp sugar
2 tsp instant yeast
2 tbsp olive oil
1/2 tsp fine sea salt
additional olive oil for brushing
Method
Combine milk, sugar, and yeast in a medium bowl and let sit for 5 minutes, until bubbly.
Combine flour and salt in a large bowl, add the milk mixture, and stir with t wooden spoon until dough starts to form a ball.
Note: You can also do this in a stand mixer with dough hook attached at medium speed.
Knead dough on a lightly floured surface until smooth, about 5 minutes.
Form into a ball and put in a large bowl, lightly coated with olive oil, cover with plastic wrap, and let rise for 2 hours.
Butter and flour a 8×11 inch baking pan. I like using a glass Pyrex pan.
Cut the dough into 12 equal pieces, shape into balls, and place in the pan spacing evenly to make 3 rows of 4.
Cover with plastic wrap and let rise for 1 hour.
Preheat oven to 375 degrees.
Brush rolls lightly with olive oil and bake in the center of the oven for 25 minutes of until golden brown.
Let cool and serve.
