Mini Potatoes Anna is a classic potato dish from France. It’s an elegant potato cake that is made with thin slices of potatoes layered with butter and seasonings, then baked until golden brown. Ingredients

1 3/4 lbs waxy potatoes, like Yukon Gold

1 stick of butter

3 tbsp thyme

1 clove of minced garlic

2 tsp kosher salt

black pepper

1 12 cup muffin tin

Method

Preheat oven to 350 degrees.

Melt butter in a small saucepan.

Brush each muffin cup with butter and place a parchment round, cut parchment paper to fit the bottom of the cup, in the bottom of each.

Add 1/2 tsp of butter to each cup.

Add thyme and garlic to the remaining butter and simmer on low heat about 2-3 minutes.

Slice potatoes and thin as possible and add to a large bowl.

Pour butter mixture over potatoes, add salt, pepper to taste and toss well.

Add potatoes to muffin cups in overlapping slices. Press down and scrape any remaining butter onto tops of potatoes from the bowl.

Cover tightly with foil, place on a baking sheet and bake until very soft, about 35 minutes.

Remove foil, place baking sheet on top of the muffin tin, invert and tap until potatoes come out of the pan.
