Ingredients
2 onions, sliced into 2 inch thick rings
2 large eggs, beaten
1 1/2 cups Panko
1 cup all purpose flour
1/2 cup grated Parmesan
Method
Preheat oven to 400 degrees.
Lightly oil a baking sheet or coat with nonstick spray.
In a large shallow bowl, combine Panko and Parmesan.
Put flour on a large plate and beaten eggs in another large shallow bowl.
Dredge onion rings in flour, then eggs, then Panko mixture, pressing to coat fully.
Spread onion rings in single layer on baking sheet and coat with nonstick spray.
Bake until golden brown and crispy, about 20-25 minutes.
