Ingredients

6 large eggs

1 cup chopped pancetta or slab bacon

6 tbsp grated parmesan cheese

1 tbsp butter

salt and pepper

Method

In a small skillet over medium heat, cook the pancetta, or bacon, until just cooked. Drain on a paper towel.

Add the eggs and parmesan to the bowl and mix well. Salt and pepper to taste.

Turn on your broiler.

In a medium oven-safe skillet, melt the butter over medium heat.

As soon as the butter is melted add the egg mixture and cook until the bottom and edges are set.

Place the pan under the broiler and cook until top is just cooked, but not browned.

Slice and serve.
