Ingredients
1 2/3 cups grated Parmesan
3 cups self rising flour
1 tbsp sugar
1 tsp black pepper
2/3 cup batter, cubed
1 cup buttermilk
1 large egg, beaten
Method
Preheat oven to 425 degrees.
Line a baking sheet with parchment paper.
Combine flour, sugar, pepper, and 1 cup grated Parmesan in a large bowl.
Mix in butter until dough looks like crumbs and then add the buttermilk and mix until dough comes together.
Form dough into a 1 inch thick rectangle on a lightly floured surface,
Cut in 4 pieces and stack them on top of each other.
Form back into a 1 inch rectangle.
Repeat cutting, stacking, and forming 2 more times.
Stretch dough into a 3/4 inch rectangle, about 8×10.
Cut rounds using a 1 1/2 inch round cutter or a glass. Make sure to press straight down and not twist the cutter.
You should have 32-36 biscuits, discard the scraps.
Sprinkle all but 2 tbsp of remaining Parmesan on the baking sheet and place biscuits on top, about a 1/2 inch apart.
Brush tops with beaten egg and sprinkle with additional pepper and the 2 tbsp of Parmesan.
Bake 12-14 minutes or until biscuits are golden.
Remove from oven and serve warm.
