Ingredients

1lb Long pasta (fettuccine, linguine, or spaghetti)

2 1/2lbs Cherry tomatoes, halved

4 Cloves of minced garlic

1/3 Cup parsley

1/4tsp Oregano

2tbsp Olive Oil

1/4 Cup torn basil leaves

Method

Heat oven to 400 degrees.

Line a baking sheet with parchment paper.

In a large bowl combine the tomatoes, garlic, oregano, parsley, and olive oil and mix well.

Spread on the baking sheet and cook for 20-25 minutes, stirring every 7-8 minutes.

Bring a large pot of salted water to a boil and when tomatoes are done, remove them from the oven to cool slightly, and cook pasta until al dente.

In a large bowl combine the pasta with the tomatoes and the basil, toss lightly to coat, and serve. You may set out olive oil to drizzle over pasta if you wish.
