Ingredients
1 lb pasta
2-3 sweet red peppers
1/3 cup onion, diced
4 tbsp olive oil
4 slices of bacon, cut into short strips
1/3 cup parmesan
3 tbsp parsley (chopped if fresh)
Method
Bring a pot of salted water to a boil.
Wash the peppers, split them, remove seeds, stem, and core. Cut into narrow strips.
Add the olive oil to a saute pan and on medium-high heat, cook the onion until it starts to turn color.
Add the bacon and cook until just done. Don’t let the bacon crisp.
Add the peppers and cook for 5-8 minutes, until just tender.
Cook pasta until al dente, toss with the sauce and parmesan, top with parsley, and serve.
Note: additional olive oil can be drizzled over pasta if desired.
