Note: When the container is empty I mash the remaining pineapple to get the rest of the juice out. I can usually get 16 oz or more out of the pineapple this way.
Ingredients
1 1/2 gallon of vodka
8 cans of pineapple chunks or rings in juice
Method
In a large container with a spout, place a small strainer against the inside of the spout so pineapple doesn’t clog it.
Strain the juice from 4 cans of pineapple, reserving the juice for later.
Carefully add pineapple to the container, making sure the pineapple is laying beside the strainer, keeping it in place.
Add the remaining 4 cans of pineapple, with their juice, to the container.
Add the vodka and mix well, making sure to not move the strainer from the spout.
Refrigerate overnight.
Stir, taste, and adjust with more pineapple juice if too strong.
