Ingredients

3 cups whole buttermilk

3 tbsp Tabasco

8 pieces of chicken

3 large eggs

1/3 cup of water

4 cups flour

2 tsp garlic powder

2 1/2 tbsp kosher salt

2 tsp pepper

3 tsp cayenne pepper

2 tsp paprika

oil for frying

Method

Combine the buttermilk with 2 tbsp of Tabasco in a bowl and cover or use a zip-lock bag. Refrigerate overnight.

Whisk eggs, water, and 1 tbsp Tabasco in a large bowl.

Combine flour, salt, pepper, cayenne, paprika, and garlic powder and place on a large plate.

Heat oil to 325 degrees in deep fryer, or in a large dutch oven to a depth of 2 1/2 inches.

Remove chicken from buttermilk and discard marinade.

Dip in egg mixture, dredge in flour, shake off excess flour and repeat.

Cook chicken in small batches for 8 – 10 minutes or until cooked through.

Drain on paper towels and serve.
