Profiteroles are a classic pastry that is both delicious and aesthetically pleasing. The pastry is made of light, airy pastry, similar to a cream puff, that is piped in rows to form a hollow, round shape. The pastry is then filled with a sweet cream or custard and topped with a rich chocolate sauce. Ingredients
1/2 cup flour
3 1/2 tbsp butter
1/4 cup milk
1/2 tsp sugar
1/2 tsp salt
2 eggs, beaten
1 tbsp powdered sugar
Method
Preheat oven to 425 degrees and grease a baking sheet with butter and lightly coat with flour, shaking off excess.
In a medium saucepan over high heat combine the milk, sugar, salt, butter, and 1/4 cup of water.
As soon as the mixture boils, remove from heat, and beat in all of the flour.
Return to medium heat and beat until mixture forms a thick dough and pulls away from the pan. This should take about 2-3 minutes.
Transfer dough to a medium bowl and beat in the eggs until dough is smooth.
Transfer dough to a piping tube or pastry bag with a 1/2 inch tip. Pipe dough into 12 equal mounds about 1 1/2 inches wide onto the greased baking sheet.
Dust mounds with powdered sugar, place into the oven, reduce heat to 400 right away, and bake for 16-18 minutes, until golden brown but not too dark.
Remove from pan and set on a rack to cool completely.
When ready to serve, cut in half, fill with desired filling, and drizzle with chocolate sauce.
