Ingredients
1lb Rigatoni or other tube pasta
2 Pints cherry tomatoes halved
5tbsp Olive oil
1 Clove of minced garlic
1/4tsp Crushed red pepper
1/3 Cup parsley
Method
Bring a pot of salted water to a boil.
In a skillet combine the olive oil, crushed red pepper, and garlic and heat on medium-high until garlic just starts to turn color.
Add the tomatoes, parsley, and add sea salt to taste. Cook, stirring often until tomatoes are heated through, about 3 minutes.
Remove form heat and cover to keep warm.
Cook pasta until al dente, reserve 1/3 cup of pasta water, then drain.
Add the pasta water to the tomatoes and cook, lightly stirring, over high heat for 1 minute.
Add the pasta to the sauce, toss to combine, and serve.
