Ingredients
2 whole chicken legs
2 chicken breasts
1 tbsp butter
2 tbsp olive oil
3 peeled cloves of garlic
1 sprig of fresh rosemary
salt
pepper
1/2 cup dry white wine
Method
Add butter and olive oil to a saute pan and turn to medium-high heat.
When the butter starts to foam, add the chicken skin-side down.
Brown well on both sides, about 2-3 minutes a side.
Add the garlic and salt and pepper to taste. When the garlic turns golden, add the wine and turn the heat to low or to a slow simmer.
Cover the pan and cook for about an hour or until juices run clear. If the liquid is dissipating, add a couple of tbsp of water as needed.
When chicken is done, transfer it and the garlic cloves to a platter, turn heat to high and reduce pan juices to half, then pour over chicken and serve.
