Ingredients
1 lb sweet or hot Italian sausages, or combination of the two
1 large onion
2 red bell peppers
1 tsp thyme
1 tsp oregano
1 tbsp olive oil
salt and pepper
Method
preheat oven to 450 degrees.
Slice sausages into thirds and arrange on a baking sheet.
Slice onion into 12 wedges.
Cut peppers lengthwise into 8 pieces each, removing seeds.
In a large bowl, combine onions, peppers, olive oil, thyme, oregano, salt and pepper to taste, and mix until coated.
Add vegetables with oil to the baking sheet.
Roast for 30-35 minutes or until sausages are lightly browned, stirring halfway through.
