Ingredients
1 boneless prime rib roast
Method
Bring roast to room temperature before cooking.
Preheat oven to 500 degrees with rack in middle of the oven.
Set roast in a roasting pan.
Set the roast in the oven and cook by this formula. Multiply the exact weight of your prime rib by 5 minutes (round up to the nearest minute). So a 6.45 lb roast x 5 minutes = 32.25 minutes so 33 minutes.
When that time is up, turn off the heat and leave the roast in the oven to sit for 2 hours, without opening the door.
Remove from oven and let roast rest for at least 10 minutes before carving into servings.
Notes:
* You can plan about one rib bone for two people (so a prime rib with two bones will feed four)
* You can slather the roast with a compound butter before roasting.
* You should always insert a probe-style thermometer to monitor the internal temp of your roast and avoid any chance of over-cooking. Set the probe alarm (to 125 degrees F for medium-rare) just in case, and pull the prime rib from the oven even if there’s still time left on the clock
Garlic Butter Rub
1 cup butter
7 cloves garlic, minced
2 tbsp oregano
2 tbsp thyme
2 tbsp kosher salt
1 tbsp black pepper
Combine all ingredients until fully mixed into a compound butter.
Before roasting, rub compound butter over entire roast.
