Ingredients
12 large eggs
4 oz milk
3/4 cup shredded cheddar cheese
1 small onion, sliced very thin
1/2 lb hot or sweet Italian sausage
1 bunch broccoli rabe, chopped
2 tbsp olive oil
Method
In a large bowl, combine eggs, milk, and 1/2 cup of cheddar cheese, whisk well, salt and pepper to taste, and set aside.
In a skillet, heat olive oil over medium heat and cook sausage and onion, about 6-8 minutes.
Turn on your oven’s broiler.
Add broccoli rabe to skillet and saute until tender, about 8-10 minutes.
Reduce heat to low and add egg mixture to the skillet.
Cook until edges are set, about 10 minutes.
Top with remaining cheddar cheese and set under the broiler until top is slightly browned, about 3-4 minutes.
Slice and serve.
