Ingredients
3/4 lbs Yukon gold potatoes
1 lb sweet or hot bulk Italian sausage
3/4 cup water
6 tbsp butter
1 1/2 tsp sea salt
3/4 cup flour
4 large eggs
1/2 cup shredded mozzarella
1/4 cup grated parmesan cheese
1 tsp thyme
1 tsp oregano
1 large egg beaten with 2 tbsp water
Method
Preheat oven to 425 degrees.
Grease 1 or 2 mini muffin pans with cooking spray.
Boil the potatoes for 20 minutes until tender, cool, peel, and lightly mash.
Cook the sausage until browned.
In a medium saucepan, heat the water, salt, and butter to a soft boil. Add the flour and stir until combined. Keep stirring until dough comes away from sides of the pan, about 2-3 minutes.
While using an electric mixer or stand mixer, add the eggs to the dough one at a time followed by the cheese, thyme, and oregano.
Stir in the potatoes and sausage.
NOTE: This is enough dough for 4 dozen puffs. I recommend having at least 2 muffin pans.
Fill muffin cups with dough, brush with egg/water mixture and bake for 20 minutes or until golden.
